Healthy BLT Side Salad

This Lightened Layered Salad is the perfect dish to bring to that summer BBQ you’re worried won’t have many healthy options. It satisfies meat and veggie lovers alike! If you’re in a hurry or just want to maximize your Vitamin D intake, (hello, sunshine!) save time by purchasing pre-washed bagged lettuce and spinach and pre-cooked hardboiled eggs.

Serves 6

SALAD:
1 head Romaine, chopped
8 oz Baby Spinach
8 Hard Boiled Egg Whites, chopped
8 oz Turkey Bacon, cooked, cooled and chopped
2 whole Tomatoes, chopped
½ bunch Green Onions, Thinly Sliced
4 oz low-fat Cheddar Cheese, Shredded
5 oz Frozen Peas (1/2 bag), Partially Thawed

DRESSING:
½ cup Greek Yogurt, Plain Fat-free
½ cup Sour Cream, Fat-free or Low-fat
Fresh Dill, Chopped (optional)

DIRECTIONS:
In a clear glass bowl, layer the ingredients in the order listed above. Arrange on around the edge of bowl.
Combine dressing in a small bowl.
Spread dressing on top.
Combine just before serving.
